White Beans with Tarragon and Cream

A comforting dish of herby, creamy beans. You will need some bread to wipe up the juices from the plate, or serve it on toast.

For 2
a knob of butter
1 small onion, finely diced
1 bay leaf
1 small carrot finely diced
2 sprigs of fresh thyme
leaves from 4 branches of fresh tarragon
1×400g/14oz tin white haricot or flageolet beans
150ml/¼ pint single cream
freshly ground black pepper

Melt the butter in a saucepan and fry the onion gently, until it is soft and golden. It must not burn, or it will become bitter.
    Add the bay leaf, carrot, thyme and tarragon. Tip in the beans, well-rinsed and drained. Pour in the cream and slowly bring to the boil. As soon as the mixture starts to boil, remove it from the heat, correct the seasoning – it may need a good grinding of pepper – and serve hot.
