Spanish ​cuisine is varied and rich, centered around quality ingredients and having a strong appreciation of seasonal freshness. The Spanish cultural history also reflects and preserves generations of regional traditions.
Many people associate Spanish cooking with paella and nothing else. The reality could not be more different. Because of the size of the country, Spain's cooking can be difficult to summarize, but it is always robust, flavorful, and very well prepared. Tapas are one of the most famous (and pleasurable) aspects of Spanish cuisine, and there is always an amazing array served in every village, town, or city. The golden tortilla is the most well-known example of Spanish tapas, but other tapas can be made from seafood, meat, poultry, eggs, and vegetables–and they can be served hot or cold. Tapas can be eaten as appetizers or snacks, and the more substantial versions can stand quite happily alone as main meals.
